Broccoli Salad (from Sheran)

Broccoli, bunch trimmed, cut-up
purple onion - small amt
Almond, sliced
Cranberries, dried
(original recipe used raisins)

Dressing (original used 1 cup mayonnaise):
1/2 c Raspberry wine vinegar
1/4 c. poppyseed dressing
1/4 c. sugar
salt & peperr

Combine all ingredients & chill.


Caramel Apple Salad/Dessert (from Weight Watchers - Pat)

1, 20 oz. crushed pineapple with juice

1, 8 oz. whipped topping, fat free

1 oz. box sugar free instant butterscotch pudding

4 large apples, diced

Combine pineapple & pudding then add whipped topping and fold in apples.


Fruit Salad, Easy (from Pat)

Pat’s adaptations

2 medium apples, diced
1, 16 oz. can pineapple tidbits
2, 16 oz. cans chunky fruit (cocktail, peaches, mandarin oranges, etc.)

2 Tbsp. lemon juice
1/2 small p;kg. instant lemon pudding
2-4 Tbsp. juice from pineapple
option - red seedless grapes

Drain fruits. Combine them and sprinkle with lemon juice. Next sprinkle dry instant pudding over all and stir. Add just enough pineapple juice to moisten pudding mix. Taste. If not tart enough add a little more lemon juice. Chill and serve.

Nutty Pear Spinach Salad from Jennifer ate at Jerry's Retirement

Salad

6 c. baby spinach
1 large pear, thinly sliced lengthwise
1/2 c. dried cherries
2/3 c. pecans, toasted
1/2 c. crumbled blue cheese

Vinaigrette

2 T balsamic vinegar
1 T honey
1 T soy sauce
1 1/2 t stone ground mustard (dry)
1 clove garlic, minced
1/4 t salt
1/8 t fresh ground black pepper
1/2 c. olive oil

Toss salad ingredients in large bowl. Mix first 7 vinaigrette ingredients in small bowl. Slowly drizzle in olive oil. Drizzle vinaigrette over salad. Toss lightly. Serve immediately.

Sunflower Noodle Coleslaw (Faye Bauer)

Ingredients:

1 pkg. (3 oz) chicken ramen noodles
1 pkg (14 oz) coleslaw mix
1/2 cup unsalted sunflower kernels
1/4 cup chopped green pepper
1/3 cup sunflower oil
1/4 c. white vinegar
3 Tbsp. sugar
1 Tbsp. poppy seeds
3/4 tsp. pepper


Directions

  1. Break noodles into small pieces. In a large bowl, combine the noodles, coleslaw mix, sunflower kernels and green pepper.
  2. In a small bowl, whisk the oil, vinegar, poppy seeds, pepper and contents of seasoning packet. Pour over salad and toss to coat. Chill until serving.

Yield: 10 servings
