Beef Jerky Recipe - (from Kelsey W --- Beef Awareness at FHSU 4/29/10)

1 T salt
1 tsp curing salt
1 tsp
onion powder
1 tsp garlic powder

1 tsp black pepper
1/4 c soy sauce
1/3 c Worcestershire sauce
1 T liquid smoke

Mix together with 3 lbs of ground beef and then set in refrigerator for 4 hrs or overnight>
After taking it out of the refrigerator, roll out to 1/4 of an inch and then cut into thin strips.
You can bake in the over at 200 degrees for 1 1/2 hrs. or put in a dehydrator until done.

May add jalapenos or any other peppers or anything that you like to make the jerky personalized.

Black Bean Corn Salsa (from Jan O)

1 can Mexican corn (drained)
1 can black beans (drained & rinsed)
1 can Rotell tomatoes

1 cup chopped green onions
1/2 cup Italian dressing
1 Tbsp. garlic powder

Extra: Tortilla chips
Mix all ingredients together & chill. Serve with tortilla chips.


Cheese Ball (Karen) Eileen & I used. Tina's 4-H demonstration

 

1 # American Cheese
1/2 lb. sharp cheese
1/2 lb. blue cheese (we used gorgonzola cheese when possible)
1 lg. (8 oz.) cream cheese
1 tsp. Worcestershire sauce

1/4 tsp. celery salt
1/4 tsp. garlic salt

salt & pepper
mayonnaise to moisten
1 cup chopped nuts, optional


Grate various cheeses, add cream cheese and blend. Add liquid, salt, & nuts. This should be soft enough to mold with hands into balls. Place ball in center of sandwich tray; dust with paprika & surround with crackers. Use knife to spread.\Half of this recipe makes a good sized ball.

Tina made various shapes: small apples (blush with paprika & cloves), pumpkins with ridges and small broccoli pieces for stem, bells.... use imagination.


Cucumber Salsa (from Deb)

 

6 medium cucumbers
1 med. onion
2 pkgs. dry Ranch mix
2 cans Rotel tomatoes, drained

1 Tbsp. cilantro (less)
1/4 cup white vinegar
pinch of
sugar
salt & pepper to taste

We were wondering if zucchini wouldn't work also...


Cool Cucumber Salsa

2 medium cucumbers - peeled, seeded, and chopped
2 medium tomatoes, chopped
1/2 cup chopped green bell pepper
1 jalapeno pepper, seeded and minced
1 small onion, chopped
1 clove garlic, minced
2 tablespoons lime juice
1 teaspoon minced fresh parsley
2 teaspoons minced fresh cilantro
1/2 teaspoon dried dill weed
1/2 teaspoon salt
1 (12 ounce) package tortilla chips

Directions:
In a medium bowl, stir together the cucumbers, tomatoes, green pepper, jalapeno pepper, onion, garlic, lime juice, parsley, cilantro, dill, and salt. Cover and refrigerate for 1 hour. Serve with tortilla chips.


Veggie Crack (from Deb's Facebook)

Chop:
1 green bell pepper, 1 red bell pepper
3 stalks of celery, 1 medium onion
2 cloves of garlic

Rinse & drain:
1 can white corn, 1 can black eye peas
1 can pinto beans (i used rnach style beans with jalapeno slices), 1 small can diced green chilies

Add & mix

1/2 cup oil, 3/4 c. sugar
3/4 cup (prefer 10 T) cider vinegar, 1 tsp. each of salt & pepper

marinade for several hours or longer
serve with Tostitos scoops
