Hominy Casserole (mom)

3 cans hominy
1 cup chopped green chili
1# colby cheese
onion (whatever you like)

Mix hominy, chili, onion & part of the cheese together in casserole dish.Top with heavy layer of cheese & bake until onions are soft.

Turnip Casserole

3 cup diced turnips
salt
1 tsp. sugar
3 Tbsp. butter or margarine
3 Tbsp. flour
1/2 tsp. salt
1/8 tsp. nutmeg
milk
1/2 cup crushed dry cereal
2 Tbsp. melted margarine
2 Tbsp. grated cheese

Cook turnips in water, adding sugar & salt until tender. Drain, reserving liquid. Melt butter. Add flour, salt, nutmeg and blend. Add reserved liquid (if less then 1 1/2 c. add milk to make that much). Cook and stir until thickened. Combine with turnips in greased baking dish. Cover with dry cereal, margarine & cheese. Bake in 325ºF oven until brown (25 min.) Serves 6

Summer Vegetable Casserole

In an oblong pyrex dish place a layer of zucchini squash (or yellow may be used), a layer of okra, a layer of sliced onion, a layer of ground beef. Repeat these layers and pour a no. 2 can of tomatoes over the top. Salt and pepper may be used as desired. Bake for 30 min. in a 350º degree oven.

Cauliflower & Peas

raw cauliflower, cut
frozen English Peas
onions, sliced

add mayonnaise , mix and let set for 24 hrs.
