I gave this recipe from Gen to mom because Tina liked them. Mom made a lot of them and Tina got tired of them, but mom tried to spoil us by making something we liked.
Let stand 24 hrs.:
2 gal. large cucumber rings (peeled & seed out)
2 cup hydrated lime
8 1/2 qt. water
Drain & wash in clear water. Soak 3 hr. in cold water. Drain. Simmer 2 hr. in:
1 cup vinegar
1 bottle red food coloring
1 Tbsp. alum
water to cover
Drain make syrup:
| 2 cups vinegar 2 cups water 10 cups sugar |
8 sticks cinnamon 1 pkg. red hot cinnamon candy |
Bring to boil: Pour over rings and let stand 24 hr. Reheat 3 times.
On third time pack into jars & seal

Another one she had from a magazine:
Peel 7 lbs. of cucumbers; slice and core. Soak 24 hours in 1 cup lime to a gallon of water. Drain and rise. Soak 3 hours in ice water. Drain and rinse. Simmer 2 hours in:
1 cup vinegar
1 T. alum
1 large bottle red food coloring
enough water to cover
Drain. Make syrup of:
3 cups vinegar
3 cups water
11 cups sugar
12 sticks cinnamon
2 pkg. red hot candy
Bring to a boil. Pack rings in jars. Pour syrup over rings & seal.
