some of my favorite I remember when I was at home:

Extra-Special Hamburgers

(we didn't cook them on the grill or broiled them, but I think I'll try it that way, I'll probably like it better)

1 pound ground lean beef
2 Tbsp. minced green pepper
1/2 cup tomato catsup
1 tsp. onion salt
1/4 tsp. garlic salt
1/2 tsp. powdered dry mustard
1/2 tsp. salt
1 1/2 Tbsp. wine vinegar
1 1/2 Tbsp. salad of olive oil

Combine all ingredients. Shape into four patties. Broil over charcoal fire 45 minutes or until done, turning to brown on borth sides. Serve between warmed, split hamburger buns (wrap them in foil to warm on the grill).

Yields four servings


Impossible Cheeseburger Pie

1 pound ground beef
1 1/2 cups chopped onion
1/2 tsp. salt
1/2 tsp. pepper
1 cup shredded cheddar cheese (about 4 ounces)
1 1/2 cups milk
3/4 cup Bisquick baking mix
3 eggs

Heat oven to 400º. Lightly grease 10-inch pie plate. Cook and stir beef and onion until brown; drain. Stir in salt and pepper. Spread beef in pie plate; sprinkle with cheese. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour into pie plate. Bake until golden bown and knife inserted in center comes out clean, about 30 minutes. Let stand 5 minutes; garnish as desired. Refrigerate remaining pie. 6 to 8 servings.

Note: If using 9-inch pie plate, decrease milk to 1 cup, baking mix to 1/2 cup and eggs to 2.

High Altitude Directions (3500 to 6500 feet): Bake 10-inch pie about 35 minutes; bake 9-inch pie 30 to 35 minutes.
