I used to not like pineapple, while my sister loves it. But when I would go to Furr's Cafeteria (I think) I would always select this pie - it could be because I like the sweetened condensed milk & whipped topping and nuts -- I would probably eliminate the maraschino cherries, but I can even tolerate some with the previous ingredients :-)
1 (15 oz.) can sweetened condensed milk (can make your own)
1/4 c. lemon juice
1 (13 oz.) can crushed pineapple, well drained
1 cup chopped pecans
1 large container prepared whipped topping
Few diced maraschino cherries, well drained, opt.
Mix all ingredients and our into prepared graham cracker crumb pie crust.
Sprinkle with a few cracker crumbs and a little toasted coconut.
Chill at least four hours before serving.
This makes it a little lower in calories and probably cheaper.
Add 1 cup plus 2 Tbsp. instant non-fat dry milk to 1/2 cup warm water. Mix well. Set in pan of hot water and stir in 3/4 cup sugar, stirring to dissolve sugar.
This is equal to one can of sweetened condensed milk.
