Mom fixed these often and seemed to always have some in the freezer - she used her freezer and remembered that she had them... I fixed them in Hays, but the kids (including Kim) got sick because they ate too many of them while playing in the wading pool at Buffalo Hills.
Line cookie sheet with crackers.
Boil 1 cup brown sugar & 2 cubes oleo. Boil 2 minutes, add nuts & vanilla. Pour over crackers & brown in 350º oven for 6 minutes.

another recipe she had which may have been what she made (although I found 2 copies of the above in her recipe:
24 graham cracker halves
1/2 cup butter or margarine
1 cup brown sugar, firmly packed
1 tsp. vanilla
1 cup nuts, chopped
Arrange crackers on a greased baking sheet. In a saucepan, comine butter and sugar. Heat, stirring constantly, until butter is melted and mixture is completely blended. Remove from heat; stir in vanilla. Spoon mixture evenly onto each cracker and sprinkle with nuts. Bake at 350ºF. for 10 minutes. Cool on a wire rack. Break each cracker in half. Store in a tightly covered container. Yields about 4 dozen.
No Bake Cookies
mom seemed to always have these cookies (bars) on hand. She really liked sweets, but never did gain weight - rather like James...
1 cup white corn syrup
1 cup sugar
1 12oz. jar peanut butter
4 1/2 cup Rice Krispies or Corn Flakes
1 can flaked coconut (1 cup), optional
1 cup pecans, broken, optional
Combine sugar and corn syrup and bring to a boil. Remove from heat and stir in peanut butter. Let remain on burner until peanut butter melts. Pour this mixture over cereal and coconut and/or nuts. Mix well and drop by spoonfuls on wax paper. Mom would also place in pan and cut when cooled.
I remember baking these at home in LW and using a decorated cut-out bottom glass to press - rather then pressing with a fork.

Cook raisins in the water until the water is all absorbed, about 15 minutes. Then add the soda to raisins |

Mix together:

Cream sugar & shortening, add eggs. Beat well. Add dry ingredients, mix well. Add raisins and mix into dough. Take a small amount of dough & roll in your hands to a round ball size of a walnut (use small dipper). Dig in sugar & cinnamon mixture. Place on ungreased cookie sheet (I usually spray the sheets with spray grease) & press flat with a fork (or bottom of cut-out glass).
Bake in a 350º oven for 10-15 min.
Makes about 4 dozen.
Brownies (with marshmallows)
I know Eileen liked this (or last she made it often since she didn't like chocolate)
1/2 c. shortening |
2 Tbsp. cocoa 1/4 tsp. vanilla 1/2 cup chopped nuts marshmallows (enough to cover top of brownies the small ones work nicely) |
Cream shortening and sugar. Add eggs. Beat well. Sift dry ingredients, add to cream mixture. Mix well, add vanilla & nuts. Bake in 8x12" baking dish for 20 to 30 minutes at 325º. Take from oven. Put marshmallows on top. Return to oven for 3 minutes. Then frost with the following:
Chocolate Frosting: Combine and boil for 3 minutes: 1/2 cup brown sugar, 1/4 cup water, 1 square unsweetened chocolate (I used the choco-bake already melted pkgs). Add 3 Tbsp. butter and 1 tsp. vanilla and let cool. Then stir in 1 1/2 cup powdered sugar. Frost the top of the brownies with this and cool.
