Cucumber Slaw (from Lenice Felter)
She brought some cuks from Okla. to Wisc. and I was going to watch her make her infamous cucumber slaw, but I missed it, as usual. So I called Dian today (07/23/04) to see if I could get a start on it...
shred cucumbers and put a heavy layer of salt on top for approx. 20 min.
Drain off moisture
Dressing:
Miracle whip, mayonnaise and/or sour cream with Pepper and small amount of chopped onions (add salt, if needed). If sour cream is used usually add a small amount of lemon juice plus mayonnaise.
Pat's variation (07/24/05): (I think it tastes similar to what Lenice makes)
| 2 lg. cukes, shredded 2 - 4 Tbsp. onion, chopped 1 c. sour cream (light) |
2/3 c. Miracle whip
(light) 3 Tbsp. lemon juice 1/2 tsp. pepper |
Cover generously with salt, but not too thick. Let stand approx. 20 min. Drain and rinse. Add dressing, chill & serve.
James' & mine Version (09/23/06)
James loved cottage cheese salad (large curd), chopped onions, cucumbers, tomatoes, & salt & pepper (also could add chopped green peppers).
So when I thought the above recipe was a little too salty I added cottage cheese, tomatoes, more grated onions and of course more pepper - yum-yum!

2-3 cukes
1 pkg. ranch dip mix
1, 16 oz. container of sour cream
2 Tbsp. vinegar
1 can rotelle (Pat used mild style)
cilantro, if desired
